Get ready to cheer and shout over the roar of engines as cross country skiing gives way to the Hayward 300 snowcross event. While we haven't quite seen the proverbial in like a lion out like a lamb, the winter recreation season is quickly winding down as we turn the calendars to March. Birkie weekend was tremendous and even though there is always a high level of excitement that comes with an international gathering of this caliber, there seemed to be an added anticipation throughout the entire weekend this year. With the outstanding conditions we have had this year, it is easy to understand this. The attention shifts this week to the Hayward 300 as snowmobilers and X games athletes from around the country converge on Hayward for ISOC's 8th stop of 9 in their annual winter tour. The event will be complete with autograph signing, track jumps, live music, and food vendors, including yours truly. Snowmobile trails are still open in Sawyer County, so this weekend makes a great opportunity to put a few more miles on your machine before the spring thaw sets in. It won't be long and it will be time for cabin cleaning, putting docks in, and polishing boats. With the great winter we had this year, we are keeping our fingers crossed for more of the same as we approach spring and summer. We are working diligently on a couple of new menu items for this summer and look forward to seeing you at the lake and serving you up the best BBQ in the land.

Baked Apples & Cheese (Page 38 of Backroads and Sidestreets)
Ingredients:
1 cup packed light brown sugar
1 teaspoon cinnamon
2 tablespoons butter
4 cups sliced and peeled Granny Smith Apples
3/4 cup flour
1/4 cup freshly grated cheese
1 1/2 cups sharp cheddar cheese, cut into 1/2 inch cubes
2 cups Pecan Streusel (page 87)
Mix brown sugar and cinnamon in bowl. Cut in butter until crumbly. Stir in apples. Mix flour and Parmesan cheese in a bowl. Add sharp cheddar cheese, tossing to coat. Add apple mixture and mix well. Preheat the oven to 350 degrees. Spoon the apple mixture into a buttered 9x13 inch baking dish. Bake for 20 minutes. Lightly stir. Sprinkle with pecan streusel topping. Bake for 10 minutes more.
Yield: 6 Servings
